Cheesy Stuffed Peppers&nbsp;<\/strong><\/p>\n\n\n\n<p>Ingredients&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>2 lbs ground beef&nbsp;<\/li><li>2 cups cooked brown rice&nbsp;<\/li><li>2 cans (28 ounces) fire roasted crushed tomatoes&nbsp;<\/li><li>8 slices pepper jack cheese or use your favorite cheese&nbsp;<\/li><li>1 small onion, diced&nbsp;<\/li><li>3 cloves garlic, diced&nbsp;<\/li><li>2 teaspoon cayenne pepper, ground&nbsp;<\/li><li>1 teaspoon basil&nbsp;<\/li><li>1 teaspoon oregano&nbsp;<\/li><\/ul>\n\n\n\n<p>Instructions&nbsp;<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 350 degrees.<\/li><li>Bring a large pot of water to a boil.&nbsp;<\/li><li>While the water is boiling, clean the peppers and cut them in half.<\/li><li>Put the pepper halves in the boiling water. Boil for 4 minutes then drain.&nbsp;<\/li><li>In a large skillet brown the ground beef with diced onion and garlic. Drain ground beef into a separate pot, and toss grease in the trash.&nbsp;<\/li><li>Add cooked rice and then stir in crushed tomatoes.&nbsp;<\/li><li>Add and mix cayenne pepper, basil, and oregano.&nbsp;<\/li><li>Simmer for 20 to 30 minutes.&nbsp;<\/li><li>Place the peppers in a 13 x 9-inch baking dish, and fill with the meat mixture.&nbsp;<\/li><li>Cover with foil and bake for 30 minutes.&nbsp;<\/li><li>Uncover and top with cheese. Bake uncovered until the cheese is melted.&nbsp;<\/li><\/ol>\n\n\n\n<p><strong>2. Bacon Wrapped Spinach &amp; Cheese Stuffed Chicken Breasts&nbsp;<\/strong><\/p>\n\n\n\n<p>Ingredients:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>9 slices of thick-cut bacon<\/li><li>3 or 4 boneless skinless chicken breasts&nbsp;<\/li><li>2 cups fresh spinach&nbsp;<\/li><li>1 \u00bd cups goat cheese&nbsp;<\/li><li>3 tablespoons low-fat cream cheese&nbsp;<\/li><li>2 tablespoons lemon juice&nbsp;<\/li><\/ul>\n\n\n\n<p>Instructions:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 375 degrees.&nbsp;<\/li><li>In a medium bowl, mix the spinach, goat cheese, cream cheese, and lemon juice together.&nbsp;<\/li><li>Use a sharp knife to cut a pocket in the side of the chicken breast, careful not to cut all&nbsp; the way through.&nbsp;<\/li><li>Fill the chicken pocket with your mixture from step 2.&nbsp;&nbsp;<\/li><li>Completely wrap each piece of chicken with bacon.&nbsp;<\/li><li>Place wrapped chicken on an oil sprayed and foil-lined baking dish. Put uncovered into the oven.&nbsp;<\/li><li>Cook for 45 \u2013 55 minutes or until chicken and bacon are fully cooked.&nbsp;<\/li><\/ol>\n\n\n\n<p><strong>3. Lemon Pineapple Cake with Cream Cheese Frosting&nbsp;<\/strong><\/p>\n\n\n\n<p>Ingredients for Lemon Pineapple Cake:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>&nbsp;1 box of lemon cake mix&nbsp;<\/li><\/ul>\n\n\n\n<p>Instructions for Lemon Pineapple Cake:&nbsp;<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat the oven to 350 degrees.<\/li><li>Oil and flour a 9 x 12-inch cake pan.&nbsp;<\/li><li>Follow box instructions to make the cake .&nbsp;<\/li><li>Pour in the cake batter.&nbsp;<\/li><li>Bake for 40 to 45 minutes.<\/li><\/ol>\n\n\n\n<p>Ingredients for Cream Cheese Frosting:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>8 ounces package cream cheese, softened&nbsp;<\/li><li>1 teaspoon vanilla extract, pure vanilla&nbsp;<\/li><li>1 teaspoon water&nbsp;<\/li><li>4 cups powdered sugar&nbsp;<\/li><li>4 tablespoon butter, softened&nbsp;<\/li><li>8 ounces of pineapple, mashed&nbsp;<\/li><li>1 cup extra virgin olive oil&nbsp;<\/li><li>3 large eggs, beaten&nbsp;<\/li><\/ul>\n\n\n\n<p>Instructions for Cream Cheese Frosting:<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Set pineapple aside.<\/li><li>Whip the eggs for a couple of minutes until fluffy.&nbsp;<\/li><li>Combine with the other ingredients, except the pineapple, and mix.&nbsp;<\/li><li>Beat at medium speed for 2 minutes.<\/li><li>Add the crushed pineapple.&nbsp;<\/li><li>Frost the cake when cooled.&nbsp;<\/li><\/ol>\n\n\n\n<p><strong>4.
