It\u2019s something we all struggle with, and I decided to make the most out of the quarantine situation COVID-19 put us in.<\/p>\n\n\n\n<p>I\u2019m on the keto diet, which has been easier for me to stick with compared to other programs like <a href=\"https:\/\/www.atkins.com\/\">Atkins<\/a> or the <a href=\"https:\/\/whole30.com\/whole30-program-rules\/\">Whole 30<\/a>. You can have all the cheese, meat and vegetables you want, drink anything that is devoid of carbs and sugar and almost everything has a keto alternative.<\/p>\n\n\n\n<p>So, for the foreseeable future, we\u2019re going to talk about those alternatives and how I make them replace some of the foods I couldn\u2019t live without. Welcome to the Keto Files.<\/p>\n\n\n\n<p>The first thing I\u2019m going to talk about is the secret weapon of keto. It replaces buns for your burgers, serves as a base for any sandwich, works as a pizza, can be made into glorious taco shells and serves as a nice breakfast treat: the chaffle.<\/p>\n\n\n\n<p>They\u2019re also simple as hell to make. The only things you need are a mini waffle maker, \u00bd cup mozzarella cheese and an egg. These work well for breakfast and are served with sugar-free maple syrup and butter. Here\u2019s how to make a basic chaffle.<\/p>\n\n\n\n<p><strong>Ingredients <\/strong>(each serving makes two chaffles):<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 egg.<\/li><li>\u00bd cup of cheese (cheddar or mozzarella works, I prefer mozz.)<\/li><li>2 tablespoons of almond powder.<\/li><\/ul>\n\n\n\n<p><strong>Cooking Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Start the waffle maker and grease well.<\/li><li>Dump your ingredients in a bowl and stir well.<\/li><li>Pour \u00bd the mixture into the waffle maker, close it and let it cook for 3-4 minutes.<\/li><li>Remove when finished and enjoy.<\/li><\/ol>\n\n\n\n<p>Basic chaffles are pretty simple to make and have 3 net carbs. However, I can\u2019t shake the egg-like taste from them if they aren\u2019t used for breakfast, so I like to use <a href=\"https:\/\/kaseytrenum.com\/taco-chaffle-recipe-delicious-crispy-keto-taco-shells\/\">Kasey Trenum\u2019s Taco Chaffle<\/a> recipe for my buns and taco shells. Here\u2019s how you make them.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong> (each serving makes two chaffles):<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 egg white.<\/li><li>\u00bc cup Monterey jack cheese, shredded and packed tightly.<\/li><li>\u00bc cup sharp cheddar cheese, shredded and packed tightly.<\/li><li>\u00be tsp water.<\/li><li>1 tsp coconut flour.<\/li><li>\u00bc tsp baking powder.<\/li><li>\u215b tsp chili powder.<\/li><li>Pinch of salt.<\/li><\/ul>\n\n\n\n<p><strong>Cooking Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Start your mini waffle maker and grease lightly once hot.<\/li><li>Stir all of your ingredients together in a bowl.<\/li><li>Spoon out \u00bd the batter on the waffle maker and close the lid. Let it cook for four minutes for proper crispiness.<\/li><li>After four minutes, remove the chaffle from the waffle iron and repeat the previous steps with the rest of the batter.<\/li><li>Turn over a muffin pan and set the chaffle shells between the cups to form a taco shell. Let it sit for a few minutes.<\/li><li>Your shell is then ready to set up with all the fixings.<\/li><\/ol>\n\n\n\n<p>Chaffles are a great way to start a keto journey, as they replace some of the most common foods that aren\u2019t compliant with the diet. It\u2019s a relatively new revelation in the community and new recipes are always brewing.
